Loaded Shepherd's Pie

Total Time: Approximately 2 hours.
Mashed potatoes
1 teaspoon salt
3 large (1 1/2 to 2 pounds) Murasaki purple sweet potatoes, peeled and quartered (you can also use russet)
4 tablespoons of butter
Cheddar Cheese (optional)
Chopped cooked Bacon (optional)
Roasted corn
Corn on the cob
1 tablespoon of butter
Meat filling
3 tablespoons of butter
1 medium onion chopped
1 cup of shredded carrots
2 pounds of 90% lean ground beef
1/2 cup beef broth
2 teaspoon Worcestershire sauce
4 teaspoons dried parsley leaves
2 teaspoon dried rosemary leaves
2 teaspoon dried thyme leaves
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons of tomato paste
Step 1: In a large pot add water and bring to a boil.
Step 2: Add your potatoes to the pot and cook until soft (Use a fork to check the tenderness of your potatoes. Your fork should go through the potatoes easily when the potatoes are cooked.) The time you cook the potatoes will vary on their size. Check on them about every 10 to 15 minutes. Once they are done remove them from the heat, drain out the water and set aside until you are ready to use them.
Step 3: Stand up the corn straight in a low bowl and cut the corn off of the cob in a downward direction away from your fingers (watch my video to see how I did it).
Step 4: Heat a heavy bottom pan on high heat.
Step 5: Once the pan is hot add your corn . Cook for approximately 1 to 2 minutes on high heat until your corn starts roasting and turning darker. Once it is cooked, immediately remove it from the stove and place it into a bowl.
Step 6: Add one tablespoon of butter to the hot corn and mix. Set aside.
Step 7: Heat up a pan on medium high heat and add 3 tablespoons of butter.
Step 8: Sauté the onions and carrots together until the onions are translucent.
Step 9: Add in your ground beef and cook until it is no longer pink.
Step 10: Add beef broth, tomato paste, and Worcestershire sauce. Bring the broth to a simmer and cook uncovered for 10 minutes.
Step 11: Mix in the corn and turn off the oven.
Step 12: Add your potatoes to a large bowl along with 4 tablespoons of butter. Mash with a potato masher. Mix in your cooked bacon (optional) with a spoon.
Step 13: In a large baking dish (I used 9x13) layer your vegetable meat combination on the bottom.
Step 14: Add your mash potatoes on top then and spread. Add some shredded cheddar cheese (optional) on top.
Step 15: Place in the oven and bake for 30 minutes on 400 degrees Fahrenheit.
Step 16: Remove, let it cool and enjoy.
