No knead Pizza Dough Recipe From Bigger Boulder Baking.
Note: This recipe is highly customizable so feel free to use whatever toppings, cheese and sauce you like! I also used a pizza stone in my oven when I baked the pizza. Once you make your dough it will need to sit for about 12 to 18 hours (depending on how warm your home is) in order for the yeast to do its job. You can use a pizza tray but I used parchment paper, a pizza peel, and a Pizza stone. When the dough was ready I set the pizza peel on the counter, placed a piece of parchment paper on it, lightly dusted it and spread the dough on it. Once I was done building the pizza, and the oven was hot I used to pizza peel to set the pizza and the parchment paper on top of the hot pizza stone.
Pizza Dough
3 1/2 cups (497 grams) unbleached all-purpose flour
1/4 Teaspoon Instant yeast
2 teaspoons Salt
1 1/3 cups Blood Temperature Water
2 tablespoons of Olive Oil
Cheese
I used Mozzarella Cheese but use whatever cheese you like.
Sauce
I used Marinara Sauce but use whatever sauce you like.
Step 1: In a large bowl combine your pizza dough ingredients (flour, yeast, and salt but don't put the salt and the yeast directly on each other because this can deactivate the yeast).
Step 2: Mix all the ingredients together.
Step 3. In a cup add the water and oil and mix them together.
Step 4: Pour the oil and water mix in the flour and mix with your hands.
Step 5: Mix until the flour is incorporated into the dough. There should be no lumps of flour left dry. The dough will be wet and saggy.
Step 6: With a spatula scrape down the dough off of the side of the bowl to join the other mixed dough. Tightly cover the bowl with saran wrap so that air cant get in. Put a clean towel on top of the covered bowl and let it sit for 12 to 18 hours. It is important to cover the dough so that air can come in or else the dough will form a skin.
Step 7: If you are not ready to use it after the 18th hour, leave it covered and store in the fridge until you are ready to use it (can be stored for up to 5 days; flavor will deepen if you go this route).
Step 8: When you remove the towel from the top of the covered bowl you will see that the dough has doubled in size, has bubbles on top and smells fermented like alcohol. This is what you want.
Step 9: With flour, lightly dust your hands and a clean counter in your kitchen just enough so the dough won't stick.
Step 10: Cut the dough with a knife into equal pieces. They should be just big enough for a mini pizza to make burgers/sandwiches with.
Step 11: Roll each piece of cut dough into a ball and set it on a lightly floured surface. Cover with a clean towel and let it rest for 30 minutes.
Preheat your oven to 450 degrees Fahrenheit.
Step 12: Dust your pizza tray with cornmeal or flour (I just use a parchment paper and when I am ready I set it in the oven on top of my pizza stone).
Step 13: Once the dough is done resting grab one of the dough balls and lightly stretch it out. You want to stretch it out as big as a hamburger bun would be.
Step 14: Repeat for the other dough ball.
Step 15: Place the stretched dough on your pizza tray and start adding your sauce, cheese and other ingredients (as I stated, this pizza is highly customizable so make this based on ingredients that you love and prefer).
Step 16: Once your pizza is built stick it in the oven on your pizza tray or pizza stone and let it cook for approximately 10 minutes or until the crust is golden brown.
Step 17: Remove from the oven and add a beef patty, chicken patty, bacon or whatever type of burger you want to make with your two mini pizzas.
Step 18: Repeat steps 12 though 17 until all of your pizza balls are gone.
Step 19: Enjoy your pizza burger creation!
