Spicy Fried Chicken Sandwich on Brioche Bun

Total Time: Approximately 2 hours.
Note: When you are getting ready to coat the chicken use shallow bowls instead of deep bowls.
Ingredients:
2 pounds boneless skinless chicken breast (flattened with meat tenderizer)
2 teaspoons of salt
2 tablespoons of Dijon mustard
1 teaspoon black pepper
1/4 cup olive oil
1 to 2 tablespoons of dried parsley
1/3 cup balsamic vinegar
1 to 2 teaspoons of garlic powder or 1 minced garlic clove
Bowl 1
1 cup of flour
Bowl 2
3/4 cup of flour
1/4 cup of cornstarch
1 cup of cold water
Bowl 3
Andy's hot and spicy chicken breading (or breading of your choice such as bread crumbs, panko, etc.)
Oil for frying
Coleslaw
Small head of cabbage
3 green onions chopped
1/4 cup of chopped cilantro (optional)
1/3 cup of chipotle mayo (or non spicy mayo)
Bacon (optional)
Brioche bun (optional)
Bread and butter pickles (optional)
Cheese (optional)
Directions
Step 1: In a large bowl add salt, mustard, black pepper, olive oil, parsley, vinegar and garlic and whisk together.
Step 2: Add your flattened chicken and mix with your hand to make sure the chicken is coated.
Step 3: Cover and marinate in the fridge for at least an hour (I did mines over night).
Step 4: Once the chicken is done marinating remove it from the fridge.
Step 5: Heat a heavy bottomed deep pan or deep frying pan on medium-high heat and add oil to your pan so it comes up 1.5 to 2 inches.
Step 6: In one bowl have one cup of flour.
Step 7: In a separate bowl add your flour, and cornstarch then whisk. Add cold water and whisk once more.
Step 8: In a separate bowl add your breading.
Step 9: Remove the cover off of your container with the chicken.
Step 10: Dip it in the bowl with the plain flour first.
Step 11: Next dip it in the bowl with the flour and cornstarch mixture.
Step 12: Finally dip the chicken in the bowl with the chicken breading of your choice.
Step 13: Wait until your oil is hot. Place the chicken in the hot oil and fry it until the skin is golden brown. Turn it with tongs and do the same for the other side.
Since you flattened the chicken breast they should cook quick and evenly. They should need about 4 to 5 minutes per side. The outer skin should be brown and crispy while the inside should be white. Internal temperature of cooked chicken should be 165 degrees Fahrenheit.
Step 14: Once your chicken is cooked remove from the pot, and drain the oil on a paper towel.
Step 15: Repeat steps 10 through 14 until all of your chicken is cooked.
Step 16: In a large bowl add your chopped cabbage, green onions, cilantro and chipotle mayo.
Step 17: Mix together until all the ingredients are well combined.
Step 18: Prepare your chicken sandwich however you like.
Step 19: Enjoy.
