Apple Spiced Pancakes and Pumpkin Pie Ice Cream

Total Time: Approximately 30 minutes to 8+ hours depending if you make your own ice cream or not and also depending on the manufacture's instructions on how to use their ice cream machine.
Note: If you are making homemade Ice Cream in this recipe you will need an ice cream machine. I used the ice cream maker by Cuisine Art. Be sure to follow your manufacturers instructions for your ice cream maker. If you are making the whole recipe then start from step from step 16. If you purchased your own ice cream or wish to omit it completely then follow steps 1 through 15. I also used my coffee grinder to grind whole spices that I had but you can purchase them ground or grind them using your own method.
Ingredients:
Pancakes
2 cups of flour
2 tablespoons of baking powder
2 teaspoons of cinnamon
1 teaspoon of ground ginger
1/2 teaspoon of salt
2 eggs
1.5 cups of milk (dairy or non-dairy)
1 tablespoon of honey (or liquid sweetener of your choice)
2 apples cored and grated
1/2 cup of chopped pecans
Pecans and maple syrup to top (optional)
Butter or coconut oil to cook the pancakes in
Apple topping
3 Apples cored and finely sliced (I used a mixture of envy apples and granny smith apples)
2 tablespoons of coconut oil (or butter)
1/2 cup of brown sugar
1 teaspoon of apple pie spice (if you can find it in the store here is how you make it: 4 tablespoons ground cinnamon, 1.5 teaspoons ground nutmeg, 1/2 teaspoon ground allspice, 1 teaspoon ground ginger, 1.5 teaspoons ground cardamom)
1/4 cup of water
1 tablespoon of cold water
1 tablespoon of corn starch
Pumpkin pie ice cream
1 cup of milk (non dairy or regular)
3/4 cup granulated sugar (raw turbinado or coconut sugar can be used too)
1 cup pure pumpkin puree
1 teaspoon pumpkin pie spice (if you can't find it in the store this is how you make it:1 tablespoon cinnamon, 2 teaspoons ground ginger, 1/2 teaspoon ground allspice, 1/2 teaspoon ground cloves, 1/2 teaspoon ground mace, 1/2 teaspoon ground nutmeg; whatever is left over store and save for whenever you need it)
1 teaspoon vanilla extract
2 cups heavy cream
Step 1: In a mixing bowl combine all of the dry ingredients for the pancakes together (except the apples and pecans) and whisk.
Step 2: In a separate mixing bowl combine all of the wet ingredients for the pancakes and whisk together.
Step 3: Pour your wet ingredients into your dry ingredients and whisk together until you have batter.
Step 4: Fold in your grated apples and pecans.
Step 5: Heat a frying pan over medium high heat and add about 1 tablespoon of coconut oil or butter to coat the pan.
Step 6: Once the pan is hot add your pancake batter 1/2 cup (or 1/4 cup of you like it smaller) at a time to your pan.
Step 7: Once the pancake starts to bubble on top flip it and cook it on the other side until the pancakes are cooked all the way through.
Step 8: Repeat steps 6 and 7 until there is no pancake batter left.
Step 9: Set pancakes aside.
Step 10: Heat a small sauce pan on medium high heat.
Step 11: Add your coconut oil or butter and melt it.
Step 12: Once melted add your sliced apples, brown sugar and apple spice and mix together with a cooking spoon.
Step 13: Add your water and mix again.
Step 14: In a small bowl add 1 tablespoon each of cold water and corn starch and mix together.
Step 15: Add to your apple mixture and mix again. Let your apples cook for about 10 to 15 minutes. Mixture should have gotten thicker and apples should be softer.
Step 16: In a large sauce pan add your milk, sugar, vanilla, pumpkin pie spice, and pumpkin puree. Bring this mixture to a simmer whisking continuously.
Step 17: Once brought to a simmer turn off heat and let the mixture cool slightly (about 10 minutes).
Step 18: Add the heavy cream, stir, cover and refrigerate until completely cold.
Step 19: Use your ice cream maker to complete your ice cream creation. Follow the manufacturers directions on how to use the machine and how much ice cream mixture to pour into the machine at one time.
Step 20: Enjoy your spiced apple pancakes however you like them.
