Coconut Sugar Caramelized Plantains With Vanilla Ice-cream And Waffle Bowl

Note: I used a waffle bowl maker to make my waffle bowls. The waffle is the manufacturers recipe for their product. I also used an ice-cream machine to make my vanilla ice-cream. Be sure to follow your manufacturers directions for your kitchen appliances. You can can buy your ice-cream already made or omit it all together.


Total Time: Approximately 10 minutes if you purchased your own ice-cream. If you are making the ice-cream yourself it will take longer depending on your ice-cream maker instructions.


Waffle bowl (Optional)

1 cup of Flour

1/2 tablespoon baking powder

1/2 tablespoon coconut sugar

1 Egg

1 cup of Milk

1 tablespoon of coconut oil


Coconut sugar caramelized plantains

3 ripe plantains

3 Tablespoons coconut sugar (or turbinado sugar)

1/4 tsp ground cinnamon

1 pinch sea salt

1-2 Tablespoon(s) coconut oil (or olive oil) for cooking


Ice-cream (optional)

1 cup of Milk

2 cups of heavy Cream

1/2 cup of turbinado Sugar

2 teaspoons of Vanilla extract


Step 1: In a large mixing bowl combine your milk, sugar, and vanilla and whisk until your sugar is dissolved into the milk.

Step 2: Add your heavy cream and stir a few times.

Step 3. Cover and store in your fridge for 2 hours.

Step 4: Prep your ice cream machine to your manufacturers directions.

Step 5: Add your ice cream mixture to the machine.

Step 6: When it is ready remove it from the ice-cream maker and place it in your freezer until you are ready to use it (alternatively you can buy your ice-cream ready made).

Step 7: Carefully cut the skin off of your plantains.

Step 8: Place your cut plantains into a mixing bowl.

Step 9: Add your sugar, cinnamon, salt and coat it on your plantains.

Step 10: Heat up a large skillet on medium high heat.

Step 11: Add your coconut oil.

Step 12: Once the pan is hot add your plantains and cook until golden brown. Flip it then cook it on the other side until it is golden brown (approximately 2 to 3 minutes per side).

Step 13: Remove from the heat and set aside.

Step 14: In a mixing bowl add your wet waffle ingredients (egg, coconut oil, and milk) and whisk together.

Step 15: In a separate bowl add your flour, baking powder and sugar. Whisk together.

Step 16: Preheat your waffle bowl maker and cook your waffle to the manufacturers instructions.

Step 17: Remove your cooked waffle bowl.

Step 18: Add your cooked plantains, and ice-cream to the waffle bowl.

Step 19: Enjoy!
