Note: Read everything completely before you start. If you want the chicken nuggets, give yourself at least 2 hours to let the chicken marinate and start from step 6 and 7. Please watch my video for help.
Total Time: Approximately 3 to 4 hours
Ingredients
1 Pound of 80/20 ground beef
2 tablespoons of dried parsley
1 1/2 teaspoons of salt
1 tablespoon of dry ground garlic
Sesame bun plus the bottom of another bun
Cheese of your choice (optional)
Diced white onion (optional)
Thousand Island Dressing (optional)
Pickles (optional; I used bread and butter pickles)
2 medium sized potatoes
1 tablespoon of salt
8 ounces of boneless and skinless chicken thighs
About 1/4 cup of sesame dressing
1 cup of flour
1 egg
3 tablespoons of milk
Frying flour (I used Andy's Spicy Chicken Fry)
Oil (for frying the chicken and potatoes; I used avocado oil but you can also use grapeseed, peanut, or vegetable oil).
A thermometer is highly recommended if you are new to cooking burgers or want it cooked a certain way. A temperature guide is provided in this recipe (Infrared thermometer so you don't poke holes in your burger and lose juice).
Step 1: In a large mixing bowl add your beef, salt, dried parsley, and dried garlic and mix your hands until well incorporated.
Step 2: Separate your burgers into two to four equal portions (Two 8 ounce portions or four 4 ounce portions).
Step 3: Using your hands or a burger press mold your burger patties and indent the middle with your thumb. Place on a plate, cover and set in the fridge for about 20 minutes.
Step 4: Using a fry cutter or knife (try your best to cut uniformly if using a knife) cut your potatoes. Place them in a bowl and rinse with cold water.
Step 5: After rinsing off the potatoes fill the same bowl of potatoes with cold water and add 1 tablespoon of salt. Let it soak.
Step 6: Cut your chicken thighs into little 2 inch pieces and place in a container.
Step 7: Add the sesame dressing to the chicken and let it marinade from about 2-3 hours, or overnight for the best results.
Step 8: Once your chicken is done marinating remove it from the fridge. Heat a large heavy bottomed pan over high heat, with oil, about 2 inches deep.
Step 9: While the oil heats up get three bowls.
Step 10: In one bowl place a cup of flour. In the second bowl place your egg and milk and scramble. In your last bowl place 1 cup of your favorite frying flour.
Step11: Get a piece of the chicken that you cut previously. Dip it in the flour until it is well coated. Next dip it in the egg mixture. Lastly, dip it in your frying flour mixture making sure it is well coated.
Step 12: Once your oil is hot, start adding your chicken to it.
Step 13. Cook the chicken until it is golden brown. Since you cut the chicken small, it may cook faster. Mine took about 3
minutes on high on one side then 2 for the other but use your eyes and your best judgment.
Step 14: Remove your cooked chicken from the stove and place in a colander with a bowl underneath to drain any remaining oil.
Step 15: Repeat steps 11-14 until all of your chicken is done cooking.
Step 16: Remove your burgers from the fridge. You can cook on the stove top or a grill (I used a charcoal grill).
Step 17: Heat your grill to 450 degrees F or your stove on medium-high heat.
Step 18: Once your grill or stove is heated place your burger and cook for about 4 minutes per side (to start off) before flipping. A thermometer is ideal here. Cooking for about 4 minutes per side will yield a medium rare burger (if you divided by 2 your burger should be 8 ounces. The cook time will be less if you divided your burgers into 4). If you want a more cooked burger simply leave it on the grill or the stove to cook longer. Use your thermometer to watch your internal temperature. The cook time depends on the temperature of the stove/grill and the size of your burger.
Step 19: Resist the urge to press down or poke holes in your burger. You'll lose all the juicy flavors.
Step 20: Keep an eye on your burger and cook it to your desired internal temperature.
Internal Temperatures for beef burgers is as follows:
Medium Rare: 125- 130 degrees F
Medium: 135-140 degrees F
Medium Well: 145-160 degrees F
Well Done: 160 degree F (Careful not to burn your meat)
Step 21:Use a deep fryer or a heavy bottomed pot and heat up your oil to 325 degrees F (A deep fryer will have the temperature. If using a pot, then a thermometer will come in handy again).
Step 22: While your oil is heating up drain your fries and make sure to dry them with a towel so that no water is left of them.
Step 23: Once the oil is hot add your fries in small batches for approximately 5-6 minutes or until golden brown (if you used a knife to cut your fries keep an eye on them. Different sizes and cuts could mean that your fries will need longer or shorter times to cook).
Step 24: Remove your cooked fries from the heat and place in a large mixing bowl.
Step 25: Add salt to taste and toss so that it is distributed evenly.
Step 26: Build your burger how you like. You can make it like a big mac, or whatever you envision for yourself to eat.
Step 27: Plate your burger, fries, chicken and enjoy.
