Spicy Shrimp and Crab Ceviche inspired by Jaime

Total time: Approximately 45 minutes


Ingredients:

1 pound medium shrimp, peeled, cooked, and chopped

1/2 pound crab meat

2/3 cup fresh lime juice

2/3 cup fresh lemon juice

2 medium tomatoes on the vine diced

1 medium sized red onion finely chopped

1/2 cup chopped cilantro

1 - 2 teaspoons of Salt

Black Pepper to taste (Optional)

1/2 cup siracha mayo (Optional. You can also use regular mayo)

1 medium jalapeno pepper finely chopped (Optional)


Directions:

Step 1: In a large bowl combine your shrimp, crab, lime juice, lemon juice, diced tomato, finely chopped onion, cilantro, salt, pepper (optional), Siracha mayo (optional), jalapeno (optional), and mix together until everything is well incorporated.

Step 2: Set in the refrigerator for about 30 minutes.

Step 3: Enjoy with chips, Tostada, a salad or however you like.


Notes: If you are using raw shrimp, boil some water. While the water is boiling, peel your shrimp (if applicable) and set aside. Once the water is boiling hot add the shrimp and cook it for approximately 1 minute or just until the shrimp turns pink and opaque. Strain the shrimp from the boiling water and add it to a bowl with water and ice to cool it down before cutting adding it to your other ingredients.

If you like your ceviche less juicy use 1/3 cup of lime juice and 1/3 cup lemon juice instead.
